Illustration of a jar of grape and chia jam with a spoon Sugar-free jam: grape juice and chia

Adriana Lauffer — registered dietitian

The jam-like texture comes from the chia, not sugar or pectin: the seeds swell on contact with liquid and thicken the mixture on their own. A dietitian's recipe, designed for anyone who wants less sugar without giving up jam on toast.

Ingredients

  • 100 ml whole grape juice
  • 3 heaping tablespoons chia seeds

Method (summary): stir the grape juice and chia together well, keeping this exact ratio (otherwise the jam turns out too runny). Refrigerate in a sealed jar for 6 hours to hydrate and thicken. Sweetening is optional.
